






Mariel's Turkey and Veggie Sausages
Olive oil
1/4 cup minced onion
1/4 cup minced celery
1/4 cup minced carrots
3 cloves garlic, minced
1/4 cup minced fresh basil
1/4 cup minced fresh parsley
1 tsp sea salt
1/2 tsp red pepper
1/2 tsp tumeric
salt/pepper
1 1/4 pounds organic free-range turkey
2 large eggs, lightly beaten
Heat 2 tsp olive oil and saute onion, celery, carrots, and garlic until tender. Remove from heat and cool completely before continuing.
Combined the vegetables, herbs and spices in a large mixing bowl. Add turkey and beaten eggs and stir well. Refrigerate for 30 minutes to 1 hour.
Shape turkey mixture into patties. Heat olive oil in a large skillet and brown the patties over medium heat on both sides, about 2 minutes per side.
I love all of Mariel's stuff....simple, grain free, seasonal food!
