Grain-Free Mexican Casserole
Crust
2 large zucchini
4 medium eggs (or 3 large)
salt/pepper
Shred zucchini. Whisk eggs. Mix eggs, zucchini, salt/pepper together.
Spread in a 9x13 pan. Bake for 15-20 minutes at 350 degrees.
While the crust is baking, cook up 1.5 pounds of grass fed ground beef with an onion. Add taco seasoning (I use Frontier). Spread a layer of salsa on top of crust. Then top with meat and raw cheese. Put it back in the oven for another 10 minutes, or until the cheese is melted and the casserole is heated through.
Top with guacamole, lettuce, and tomato.

ReplyDeleteAunt Jen.....All I did was cook everything up in some butter on the stove. I waited until the broccoli was starting to wilt and get a little brown on the edges. So easy, and so yummy! xo
