Day of Eats and a Giveaway!

Here is what we ate today...

Breakfast - Rhett used up the leftover potatoes and bacon and made this egg scramble. So so so good.



Lunch - Leftovers. Quinoa w/zucchini, pea salad and some grapes.



Snack - This was the perfect snack. It totally hit the spot. This will definitely be a repeat.



Dinner - Soup and biscuits. I was planning on making salmon tonight, but it turned out to be a chilly day and I just wanted soup. We love this soup and have it several times during the winter months. This is the first time I tried this biscuit recipe. It is from the Whole Life Nutrition Cookbook. For being gluten free, they weren't too bad. I was surprised how "normal" they looked on the inside.

Hearty Lentil Soup

4 celery ribs, diced
1 medium onion, diced
3-4 carrots, diced
1 garlic glove, minced
2 tbsp butter or coconut oil
6 cups chicken broth
1 28 oz can diced tomatoes, undrained
3/4 cup dry lentils, rinsed (I use the small black french lentils)
3/4 cup barley
1/2 tsp oregano
salt and pepper to taste

Saute the celery, onion, carrots and garlic in the butter. Then add the rest of the ingredients. Bring to a boil, then lower heat to a simmer. Cover and simmer for about 40 minutes.




Dessert - We made these wonderful blondies for Family Home Evening tonight. The kids were great helpers and they turned out so good (for being gluten free/dairy free, of course). I got the recipe from The Spunky Coconut Cookbook.

  2. ohh! I didn't know you had this blog-now I'm excited!! My favorite snack? Ummm...well, other than chocolate, my favorite HEALTHY snack would have to be anything strawberry related-most recently I'll down a strawberry and spinach smoothie when I'm craving something snacky.

  3. oh yes! can you believe, i was making lentil soup today too? (only i forgot i didn't have any chicken stock...so it has been put on hold for now...)

    ps - i've started adding apples to the oatmeal just like you did with the bananas. cinnamon plus almond butter = yum!

    pps - our favorite snack is anything dipped in almond butter. why didn't anybody tell me about this before? we also LOVE popcorn and oranges. love.

  4. I'm trying the muffins and the lentil soup one day soon. Why did you not cook like this while we lived together? My wedding pictures would look a lot different. Way to go you. Our favorite healthy snack (besides smoothies) is parfaits. Quality yogurt, tasty granola, and a banana or strawberries to dip it in.

  7. Homemade Trail Mix with almonds, granola, other assorted nuts of your liking and some dried food. Easy to grab and salty yet sweet.

    I also love hummus with carrots and hummus with any crunchy vegetable.

    We love to eat apples and celery with natural crunchy peanut butter sprinkled with saw mill oats...yum! The kids love Ants on a Log or any fruit dipped into yogurt.

  9. Well, I got an air popper for Christmas so I could stop using the one my mom had in the 70s (it was starting to make me nervous), so popcorn is always a pretty good option.

    I love anything with avocado, Dan loves salsa, and Evan is like Seth and would eat a banana any chance he got! :-)

  11. We like to snack on popcorn or diced tomatoes and onions. Sometimes I add a little jalapeno or bell pepper to the tomatoes and onions.

  12. My favorite healthy snacks are hummus (especially spicy!), salsa, and guacamole with any variety of "dippers." Also, flavored dipping oil, which probably wouldn't be as exciting without the bread.

  14. My favorite snack - partly-frozen mangoes drizzled with honey, or raw almonds with a sliver of dark chocolate.

    I'm SO interested in this book - we've been straddling the Whole Foods fence for too long and this sounds like just the push we need. Glad to have discovered your blog.

  15. It's a little boring, but we're nuts about fruit. I love it that my kids think bananas, oranges, apples, grapes, and strawberries are commonplace food. It's one of the very few things I get right with them, food-wise!
