Saturday Eats

Here is what we ate today...

Breakfast - Pancake Saturday! I made some of my favorite pancakes today. Rhett made the smoothie....spinach, coconut water and berries.

Hearty Oatmeal Pancakes
This recipe comes from Simply in Season

2 cups rolled oats
2 cups plain yogurt (whatever kind you can tolerate...cow, goat or coconut. You could also try 2 cups water with 2 tbsp raw apple cider vinegar.)
The night before using, combine together in a large bowl.. Cover and refrigerate overnight.

2 eggs
1/4 cup coconut oil
In the morning, stir into oat mixture

1/2 cup flour
2 Tablespoons honey
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt

In a small bowl, mix together, then add to batter and mix briefly in a hot, greased griddle.





Lunch - Turkey sandwiches with red pepper. Sprouted sourdough bread, homemade mayo, spinach, raw cheese and turkey.



Snack - Apples




Dinner - Taco night. Leftover shredded chicken with enchilada sauce, avocado, tomato, lettuce, sprouts, raw cheese.





Uncle Blake is here for the summer! The jam sessions have begun. Seth and Ella absolutely adore their Uncle.










Fantastic video by Mark Bittman. Love this guy. Love this video. He reviews what the American diet was 100 years ago around 7 minutes 30 seconds. Then he talks about how we got to where we are today. Processed foods, canned foods, frozen foods, etc. Wonderful.
