Breakfast - Cinco de Mayo, belated. I wanted something different and came up with this. Refried beans, guacamole, scrambled eggs, fermented salsa, and some grated raw cheese. All served over a warmed brown rice tortilla. This kept me full all morning. Ella wasn't feeling the mexican food this morning, so she ate some greek yogurt. Seth shocked us all by eating pancakes this morning (notice my sarcasm?).
Snack - Ella flirted her way into a bag of free cat's cookies form Trader Joe's. She's a heartbreaker.
Lunch - The picture (and the mound of Chipotle napkins on the kitchen table) says it all.
Seth's in the zone. Don't mess with this kid while he's got fresh rice and beans.
Dinner - A swing and a miss. I tried to get the kids all excited this afternoon for "green spaghetti". They weren't buying it. We sat down at the table for dinner and all gave each other this "is this really our dinner? are we suppose to eat this?" look. Rhett took a couple bites, pushed it away, and said "it's very different". How polite. Better luck next time mom.
I actually ate most of mine. It wasn't that bad. It just tasted like a green smoothie over rice pasta. Will I ever make it again? Not a chance.
