Here is what we ate today....
Breakfast - I came home from the gym to this cooking on the griddle.
Lunch - We were very busy this morning and ended up stopping at Panera Bread. I was so unimpressed. Would you look at how pathetic this "cobb salad" is?! More like a wilted bag of iceberg lettuce for seven bucks. Oh well.
Dinner - Mexican casserole with tomatoes and watermelon for dessert. I completely whipped this up out of nowhere tonight and it was a huge hit. The husband and the brother were happy boys.
It's 5:30 On Friday Night Mexican Casserole
1 can of black beans, drained
3/4 cup frozen corn
leftover chicken
1/2 cup (or more) Trader Joe's Enchilada Sauce
1 package Trader Joe's guacamole
sprouted corn tortillas
a little cheese for the top
Heat up a skillet to medium and throw in the can of beans, the corn, the chicken and the enchilada sauce. Let it heat up. Lay 3 corn tortillas down on the bottom of a casserole dish. Drop all of the bean mixture on top the the tortillas. Spread guac overtop of the beans. 3 more corn tortillas on top. Top with cheese. Bake at 350 for 15 minutes. Bada bing bada boom.
